About the Recipe
You can substitute the canned beans for dried beans (after following the soaking directions), but I like the simplicity of using canned in this recipe.
1/2 green pepper, diced
1/2 onion, chopped
2 carrots, thinly sliced
2 cans great northern beans (rinse and drained)
1 large can of whole tomatoes, mashed (or pureed in a food processor)
1 cup water
salt, pepper, and garlic powder to taste
1) Heat a tablespoon of olive oil in a large pan and saute vegetables until tender. Add seasonings.
2) Add beans, tomatoes, and water.
3) Increase heat to just bubbling, then reduce to simmer for about 45 minutes.
Top with cheese if desired.
